Insalata Mista con Formaggio

Serves: 4

This salad is full of flavour and texture and goes well with any meal. I added walnuts, chives and Tome del Mottarone hard cheese for extra flavours and crunch. Tome del Mottarone cheese is a specialty cheese in the region of Stresa.


6 cups leafy style lettuce (not Romaine or Iceberg)

1 diced tomato

Finely diced chives to your liking

1 small diced cucumber

½ diced yellow bell pepper

½ cup diced celery

¼ cup chopped walnuts

¼ cup chopped Mottarone cheese (any hard cheese)

3 tbsp olive oil

2 tbsp balsamic vinegar

1 tsp salt


  1. Hand chop lettuce into large bowl

  2. Add tomatoes, chives, cucumber, pepper, celery, walnuts and cheese to the bowl

  3. In a small bowl add oil, vinegar and salt and mix well. Taste to see if it has enough flavours to your liking. You may want extra vinegar to zest it up or oil to tone it down

  4. Pour dressing on to salad and mix well

Serve as a side
