Leftover Turkey Rice Stir Fry

Serves: 4

Had some turkey and corn on the cob leftover from Thanksgiving therefore came up with this stir fry which can be made from any cooked turkey and corn from a can if you don’t have it on the cob.


2 tbsp sesame oil

1 bell pepper chopped

1 shallot finely chopped

1 ½ cup chopped turkey

2 cups corn kernels

3 tbsp soya sauce

4 cups cooked rice

1 tbsp hot pepper flakes (optional)


  1. Heat oil on high in a wok style pot

  2. Add peppers and shallots and sauté for 3 minutes

  3. Stir in turkey, corn and soya sauce and mix well

  4. Add rice and stir until well mixed

  5. Taste if there is enough soya sauce, if required add more to your liking

  6. Stir in hot pepper flakes

  7. Serve immediately
