Vegetarian Egg Bake

Serves: 3

Eggs are always my go to when I have little time to cook. Veggies, eggs and cheese is perfect for one of those days.


1 tbsp olive oil

I cup chopped onions

1 ½ cup chopped bell pepper

1 cup microwave steamed asparagus

2 cups microwave steamed baby potatoes

8 eggs

1 tsp garlic salt or salt to taste

½ tsp cayenne pepper

1 cup shredded Friulano cheese


  1. Preheat oven to 390°F

  2. Heat oil in large oven proof skillet and sauté onions and peppers until onions are soft

  3. Add asparagus and potatoes and sauté until veggies get a little golden

  4. Scramble eggs, garlic salt, and cayenne and add to veggies

  5. Stir in cheese and place skillet in oven for 15 minutes

  6. Serve with a bun or a salad. I served with my squaratella crackers.
