Sinful Ice Cream Cake

Serving size 16


19 Large Vanilla Ice Cream Sandwiches

1 two litre Chocolate Ice Cream (or any flavour you like)

1 one litre Light Cool Whip

10 Chocolate Chip Cookies

This makes a 9" x 12" cake but you can use smaller container.

You then adjust ingredients to the size you want.


  1. Take 2 litre ice cream out of freezer for ten minutes to thaw before starting to make cake

  2. Crumble chocolate chip cookies and combine with Cool Whip. Put in fridge.

  3. In 9" x 12" glass dish lay 9 ice cream sandwiches for first layer

  4. Top with 1/2" of ice cream for second layer

  5. Third layer is another layer of 9 ice cream sandwiches

  6. Fourth layer is another 1/2" layer of ice cream

  7. Freeze cake for 15 minutes

  8. Add fifth and final layer of cool whip with chocolate chip

  9. Freeze until ready to serve

  10. Take out ten minutes prior to serving to allow cake to thaw and make it easier to cut

  11. Keep covered in freezer for up to one month....but believe me it won't last that long

Alternatives I've tried instead of chocolate chip cookies:

  • Skor bits

  • Mini chocolate chips

  • Crushed coffee crisp chocolate bar
