Chocolate Surprise Cookies

Makes 54 cookies


1 cup butter at room temperature

1 cup sugar

1 cup brown sugar

2 eggs

2 Tbsp vanilla

3 cup flour

½ cup cocoa

1 tsp baking soda

1 cup 70% chocolate chopped

1 cup macadamia or cashews finely chopped

½ cup Nutella, chilled for an hour


  1. Pre-heat oven 325˚F

  2. Line baking sheets with parchment paper

  3. Whisk together flour, cocoa and baking soda

  4. In stand mixer cream butter and sugar until light and fluffy

  5. Add vanilla and egg and mix well

  6. Slowly add dry ingredients to the egg mixture

  7. Once combined stir in chocolate chunks and nuts

  8. Dough will be firm

  9. Fill half a scoop of dough in small ice cream scooper

  10. Press dough to the sides to form a hole in the middle

  11. Spoon a little bit of Nutella in the center

  12. Fill the rest of the scoop with dough and place on cookie sheet

  13. Bake 17 - 20 minutes until set

  14. Quickly put on cooling tray to cool
