Makes 50 – 80 pieces depending on size of pieces

Toffee is a rich caramel candy that when topped with chocolate, makes it hard to stop eating it when you start, hence why my kids call it crack.  I use pecan nuts, but you can use whatever nut you like.

I use a candy thermometer so there’s no guessing when the caramel is ready. Simply place the thermometer in the pan, making sure the tip is submerged in the mixture without touching the bottom. When the toffee reaches 295°F–305°F, it’s ready!

Note: storing the toffee in an airtight container with layers separated by wax paper, allows us to keep it at cool room temperature for two weeks.  By putting it in the fridge or freezer it will keep for up to three months.

Ingredients

200 gr chopped pecans

510 gr unsalted butter

600 gr sugar

3 tbsp corn syrup

½ tsp salt

400 gr dark chocolate, shaved thinly

Sprinkles

Directions

  1. Heat a skillet on medium heat and toast the pecans, stirring frequently, until they start to brown and smell nutty.  Remove from heat and let cool

  2. Line an 11 x 16-inch (28 x 41 cm) baking sheet with 2 sheets of aluminum foil or if you have heavy duty foil one sheet

  3. Add butter, corn syrup and salt in a large saucepan and mix well

  4. Stir in sugar and keep mixing until the caramel starts to turn golden brown

  5. Dip the thermometer in caramel and when the temperature reaches between 295°F to 305°F, the toffee is ready

  6. Sprinkle half of the pecans in the bottom of the baking sheet and evenly pour the toffee over the chopped nuts and with a spatula, spread the toffee evenly over the pan

  7. Let the toffee cool for two minutes then sprinkle ½ the chocolate evenly overtop of the toffee then and the pecans on top of chocolate

  8. Wait three to four minutes, until the chocolate looks softened and partially melted from the heat of the toffee then use a spatula to mix the chocolate and nuts together

  9. Sprinkle the remainder of chocolate on top of the toffee and again use the spatula to incorporate it into the first layer of chocolate and nuts

  10. Add as many sprinkles you want on top of the chocolate

  11. Let the toffee cool at room temperature for an hour then place in the refrigerator to harden overnight

  12. Once cooled, peel off the foil

  13. Break the toffee coarsely into small pieces using the tip of a chef’s knife

  14. Store in an airtight container in the refrigerator or freezer for up to 3 months

Toffee Toffee Autunnali

Ingredienti

200 gr di noci pecan tritate

510 gr di burro non salato

600 gr zucchero

3 cucchiai di sciroppo di mais

½ cucchiaino di sale

400 gr di cioccolato fondente, rasato sottile

Zuccherini

Indicazioni
