Scorri a basso per l’Italiano

Serves: 4

The Triple Treat — Smoky bacon, tender pasta, and golden potatoes come together in one hearty, comforting dish packed with savory flavor and satisfying texture in every bite.

Ingredients

Vegetable broth as required

150 gr bacon cut into pieces

1 tbsp olive oil

1 tbsp vegetable broth

60 gr diced onion

75 gr diced carrot

480 gr potatoes, peeled and diced into small cubes

1 tbsp Italian seasoning (My recipe)

500 ml vegetable broth

125 ml white wine

400 gr pasta

Grated cheese – I used Pecorino Romano

Directions

  1. In a large skillet add 1 tablespoon broth and bacon and sauté until fully cooked.  Adding more broth if required to not burn the bacon

  2. Transfer bacon to a bowl and set it aside

  3. To the pan heat oil and broth and add onion and carrots and keep stirring until onions are translucent

  4. Add the potatoes and Italian seasoning to the pan and cook for 3 – 4 minutes

  5. Pour in 500 ml of vegetable broth and bring to a boil

  6. Turn heat down to medium so the mixture lightly bubbles

  7. Once the potatoes have softened, roughly mash them with a fork, leaving some texture

  8. Pour in the wine and bring to a boil. Then turn heat down to medium so the mixture lightly bubbles and liquid is slowly absorbed

  9. Cook the pasta to al dente in salted water

  10. From the pasta take a glass of the water then strain the pasta and add it to the sauce along with the bacon and mix well

  11. Add as much cheese you want and pour in enough of the pasta water to make the sauce creamy

  12. Serve in a bowl with a sprinkle of grated cheese and a side green salad

Pasta Rustica al Bacon

Porzioni: 4

Ingredienti

Brodo vegetale q.b.

  9. Cuoci la pasta al dente in acqua salata
