Red Leaf Salad

Serves: 10

The freshness of the lemons and feta cheese make this salad super tasty.


½ cup olive oil

Zest of one lemon

Juice of 2 lemons

3 tbsp white vinegar

¼ tsp sugar

½ tsp salt

¼ tsp pepper

2 red leaf lettuce heads

8 radishes sliced

2 finely sliced green onions

½ cup shredded Feta cheese


  1. In a jar add lemon zest, lemon juice, vinegar, sugar, salt and pepper and shake well (can be made ahead and placed in fridge for up to a week)

  2. Wash and dry lettuce and chop into bite sized pieces

  3. Place lettuce in large bowl and add radishes and green onions

  4. Pour as much dressing you like on salad and add extra salt and pepper if required

  5. Serve in the bowl for everyone to grab their own or as a side
