Beef Roll-Ups

Serving Size: 3


1 tbsp olive oil

1 onion sliced

1 yellow pepper julienned

1 orange pepper julienned

3 beef roulade cut into half

Lowry’s garlic salt or salt and pepper to taste

1 tbsp olive oil

Shredded mozzarella


  1. Heat oil in a saucepan and add onion, garlic and peppers

  2. Cook on med-high until the vegetables brown

  3. Add vegetable broth and cook until vegetables are soft and liquid evaporated

  4. Pat dry beef with paper towel and season with salt and pepper

  5. Place between two layers of saran wrap and pound until meat becomes half as thick

  6. Place vegetables in center of beef pieces and top with mozzarella

  7. Roll beef tightly around the vegetables and mozzarella

  8. Secure seam with toothpicks

  9. Heat oil in medium skillet on med-high

  10. Place beef rolls, seam side up

  11. Cook turning meat until all sides are browned

  12. Reduce heat if beef is browning too quickly

  13. Turn off heat and sprinkle mozzarella on each bundle

  14. Cover and let sit 10 minutes

  15. Remove from pan and take out toothpicks

Serve with salad or with lemon veggie infused rice that I’ve pictured here
