Broccoli Cauliflower Chowder with Bacon

Serves 4: about 300 calories per serving


4 slices bacon

1 medium onion, finely chopped

¼ cup flour

2 cups vegetable broth

1 cup water

1 large russet potato, peeled and diced

4 cups broccoli florets cut into bite size pieces

4 cups cauliflower cut into bite size pieces

1 can corn kernels

1 cup 1 % milk

Salt and pepper to taste


  1. In a heavy pot cook bacon on med-high until crisp

  2. Using slotted spoon transfer bacon to paper-lined plate

  3. Add onion and cook until onion is soft

  4. Add flour and stir until combined

  5. Pour in broth, water and potato

  6. Bring to a boil and then reduce heat to a simmer

  7. Cook until potato is soft

  8. Add broccoli, cauliflower, corn and milk

  9. Cook until broccoli and cauliflower are tender, about 10 minutes

  10. Add salt and pepper to taste

  11. Serve in a bowl and top with bacon

Enjoy with a piece of toast or a multigrain bun
