Pistachio Parfait

Makes: 4 desserts


Wanted to make this with raspberries but they didn’t have any so I used blackberries and it complemented the pistachio’s very well. I used wine glasses to make the parfaits in and they looked beautiful.


Ingredients

1 pack 99 gram pistachio instant pudding

1 ¼ cup whole milk

1 container cool whip

¼ cup pistachio

½ cup harvest crunch granola

Blackberries


Directions

  1. Whisk pudding and milk in medium bowl until it thickens, place in fridge for ½ hour

  2. Fold ½ container of cool whip into pudding until well combined

  3. Chop pistachio into small pieces

  4. Combine pistachio and granola together

  5. Place 1 ½ tbsp of granola mixture into four glasses or small mason jars

  6. Add two to three blackberries on top of granola

  7. Divide pudding mixture into four containers

  8. Sprinkle 1 tbsp granola on top of pudding

  9. Top with two to three blackberries, leaving 4 blackberries for topping

  10. Spoon in 2 tbsp cool whip into each glass

  11. Top with 1 blackberry into each glass

  12. Sprinkle with remaining granola

  13. Cover each glass with saran wrap and place in fridge until ready to eat
