Tortellini alla Maria

Serving size 3


600 g pack of fresh tortellini

2 tbsp butter

3 tbsp flour

1 cup milk

3 slices craft cheese

½ cup parmesan cheese

½ cup frozen peas

2 green onions

Salt and pepper to taste

¼ cup parsley

¼ cup parmesan cheese



  1. Make tortellini as instructed on package

  2. Melt butter and add flour, stir until blended, should be thick paste look

  3. Slowly add milk so that it smooths out the paste

  4. Add three slices of cheese and ½ cup of parmesan and keep stirring until thick smooth sauce

  5. Rinse peas to clear out any ice and add to sauce

  6. Simmer until tortellini are ready, keep stirring

  7. Taste sauce and add salt and pepper to your liking

  8. Add tortellini to cream and blend well, if sauce is too thick add more milk

  9. Plate tortellini and sprinkle chopped onions and parsley and top off with parmesan

  10. Serve immediately
