Vegan Blueberry & Banana Pancakes

Serving size 2 - about 700 calories per serving


1 large ripe banana

1 cup blueberries

2 tbsp brown sugar

¼ tsp salt

2 tbsp vegetable oil, plus extra for cooking

1 cup self-rising flour

½ tsp baking powder

150ml almond milk (or other non-dairy milk you like)

1 tbsp vanilla


Extra fruit to serve on tip of pancakes

Icing sugar to sprinkle


  1. In a mixing bowl mash the banana and stir in sugar, salt, oil and vanilla.

  2. Add flour, baking powder and blueberries and stir together

  3. Make a well and gradually whisk the milk in

  4. The batter will be thick and droppable in consistency

  5. Spread some oil in a non-stick frying pan using a paper towel

  6. Add 2 tbsp of the batter and depending on size of your pan you may be able to make 3 at a time

  7. Fry on each side for 2-3 minutes

  8. Serve with syrup and extra sliced banana, blueberries and other fruit you may like and top with sprinkle of icing sugar
