Vegan Peanut Chocolate Chip Cookies

Serving size 24 - about 180 calories per cookie


2 cups flour

1 tsp baking soda

½ tsp kosher salt

½ cup firmly packed brown sugar

½ cup sugar

½ cup canola oil

¼ cup water

2 tsp vanilla

1 cup chopped peanuts

1 cup semisweet mini chocolate chips


  1. In a medium bowl, whisk together flour, baking soda and salt. Add peanuts and chocolate chips and mix well

  2. In a second medium bowl, break up brown sugar making sure there are no lumps

  3. Add sugar, oil, water and whisk to combine.

  4. Add flour mixture and mix until combined but there should be no streaks of flour

  5. Line 2 cookies sheet with parchment paper

  6. Spoon out 2-inch mounds of dough, spacing 2 inches apart

  7. Freeze for 30 minutes

  8. Heat oven to 375˚F

  9. Bake cookies, rotating position of pans after 6 minutes

  10. Bake until golden brown, about 10 – 12 minutes

  11. Let cool
