Being Italian means eating all types of meat and vegetables.  So trying to come up with recipes without meat or any type of product that comes from an animal is very hard.  But I've decided to spend a week exploring what it is to eat vegan.  I did a lot of research and found that cooking vegan means using different types of condiments.  Such as miso, tamari, and vegetable broth instead of chicken.  So here I go on my adventure of making vegan dishes.
