Cold Broccoli Salad

Serves: 4

I’m not a fan of broccoli but cold with balsamic sauce makes this salad a great addition to any dish.

Ingredients – Balsamic Dressing

1 cup olive oil

¼ cup balsamic vinegar

2 tsp honey

1 tsp Dijon mustard

Salt to taste

Ingredients - Broccolini

6 cups broccoli

1 tbsp kosher salt

Pot of boiling water


  1. Combine all dressing ingredients into measuring cup or glass jar and mix until well combined

  2. Taste for right salt seasoning and add if required. If you like it more vinegary add more, less vinegary add more oil

  3. Can be stored in refrigerator for two weeks – shake well when using

  4. Cut broccoli into two inch flowers

  5. Cover with water and add salt

  6. Boil until tender and your liking

  7. Strain in colander and let cool

  8. When ready place broccolini large Ziploc bag and add as much dressing as you want

  9. Seal bag and toss until broccoli are well coated

  10. Store in fridge until ready to use

  11. Plate in large bowl or serve as a side dish to any meal
