Bruschetta Cutlet Panino – Panino con Cotoletta alla Bruschetta
I had a pack of two cutlets tucked away in the freezer and turned them into this open-faced panino, topped with a tomato and shallot bruschetta, spices, balsamic vinegar and melted cheese. Paired with a crisp green salad with radishes, it came together as a simple but perfectly satisfying meal.

Greek Piadina - Piadina Greca
Piadina Romagnolo are traditional thin Italian flatbread from the Emilia-Romagna region. The are typically called Piadina or Piada. It was Italian poet Giovanni Pascoli who Italianized the Romagnolo word “piè” to “piada” and he was so in love with the flatbread of his homeland that he wrote a poem “La Paida”, a tribute describing how the Piada/Piadina are prepared.
Today I made a Greek infused version which is delicious.

Bacon Asparagus Trofie – Trofie al Bacon e Asparagi
Trofie is a thin twisted funny looking pasta from the Liguria region of Italy. It is believed it originated in the town of Sori in the province of Genoa. Trofie means “gnocchi” in the Ligurian dialect, and even though this pasta is made from flour and potatoes, it has a different in shape and texture over the gnocchi.
Today I combined this pasta with a creamy sauce with bacon and asparagus. Truly a delicious meal.
