Balsamic Broccolini & Cauliflower Salad

Serves: 4

This salad puts broccolini and cauliflower together and with the sweat balsamic dressing it is a great salad to accompany any meat dish. Also a great vegetarian or vegan accompaniment to a sandwich.

Ingredients – Balsamic Dressing

¼ cup balsamic vinegar

¼ vegetable oil

2 tbsp honey

1 heaping tsp wholegrain Dijon mustard

3 cloves garlic finely minced

2 tbsp finely chopped parsley

Salt to taste

Ingredients – Broccolini and Cauliflower

2 cups broccolini (broccoli tender stems)

4 cups cauliflower

1 tbsp kosher salt

Pot of boiling water


  1. Combine all ingredients in a glass jar

  2. Shake until well combined

  3. Taste for right salt seasoning and add if required

  4. Can be stored in refrigerator for two weeks – shake well when using

  5. Add salt to pot of boiling water

  6. Clean and wash broccolini

  7. Add to boiling water and cook until tenderness you want

  8. Strain in colander and let cool

  9. When ready place broccolini in large bowl and pour as much dressing you want

  10. Toss until broccolini are well coated

  11. Plate on nice platter or serve as a side dish to any meal
