Cold Green Bean Salad

Serves: 4

This cold bean salad can be served with any meat dish instead of a green salad.


1 ½ pounds green beans

1 tsp coarse salt

½ tsp Dijon mustard whole grain

2 tsp honey

¼ cup white vinegar

½ cup olive oil

½ tsp salt


  1. Clean beans by cutting the ends off

  2. Cut into 1 ½ - 2 inch pieces and place in large sauce pan

  3. Add coarse salt and cover with water

  4. Boil for ten minutes or until beans are tender

  5. Strain beans and let them cool

  6. In a jar shake together mustard, honey, vinegar, oil and salt

  7. Place beans in a bowl and pour as much dressing as you like

  8. Toss well and set aside in fridge until you are ready to serve
