Baked Chicken Roll

Serves: 4

Combine cream cheese with onions and spinach and smother it on chicken, then roll it up and bake. This easy to make juicy chicken recipe is a true hit.


4 chicken breasts

Garlic salt to taste

2 shallots finely chopped

1 cup cream cheese

½ cup shredded mozzarella

1 cup finely chopped spinach


1 tbsp olive oil


  1. Preheat oven 390°F

  2. Slice chicken breast in half

  3. Place saran wrap on counter

  4. Lay out chicken slices

  5. Season with garlic salt or salt and pepper to taste

  6. Place a second saran wrap on top of chicken and using a mallet pound chicken until ¼ inch thick

  7. Mix together ¾ of the shallots, cheeses and spinach together in a bowl

  8. Spoon out enough cheese mixture to cover each piece of chicken and spread all over

  9. Roll up chicken and use a toothpick to seal the edge

  10. Brush oil all over baking dish and add chicken with toothpick on bottom

  11. Sprinkle left over shallots on top of chicken

  12. Bake for 40 minutes and let sit for five minutes before serving
