Chicken Cauliflower Pepper Pasta

Serving size 4

For vegetarian version omit the chicken.


3 cups of dry penne pasta

2 tbsp oil

2 cups chopped cauliflower

1 onion, thickly julienned

2 bell peppers, thickly julienned

1 cup cooked chicken

1 cup white wine

2 tbsp hot sauce (optional)

Salt and pepper to taste

¼ cup parmesan grated cheese

Parsley for garnish


  1. Cook pasta per instructions

  2. Heat oil in large skillet

  3. Sauté peppers and onions for 5 minutes

  4. Add cauliflower and sauté for 3 minutes

  5. Add chicken, wine, hot sauce and simmer for ten minutes

  6. Scoop out pasta directly into sauce, add a little of the pasta water if require

  7. Add salt and pepper to taste

  8. Plate and top with parmesan cheese and parsley
