Loaded Scrambled Eggs

Serves: 3

Was one of those days that I didn’t feel like cooking so eggs it is and as simple as possible. With some baguettes it made it a perfect dinner.


1 tbsp olive oil

1 cup diced bell peppers

1 cup diced onions

1 cup chopped ham

Salt and pepper to taste or garlic salt

8 eggs

¼ cup milk

1 cup shredded mozzarella


  1. Heat oil in large skillet and sauté pepper and onions

  2. Once onions are translucent add ham and salt and pepper to your liking

  3. Cook until ham starts to brown

  4. Beat eggs and milk together and add to skillet and let set for a minute

  5. Add mozzarella and keep stirring with wooden spoon until eggs are fully cooked

  6. Serve immediately with a baby baguette or bun
