Rice Carbonara

Serves: 4

My rice carbonara is a great alternative to the common pasta carbonara. Instead of pancetta I’m using chorizo and it gives the rice nice zing. Rice is such a comfort food for me, so this one hit that mark too.


2 tbsp olive oil

1 cup chopped chorizo

4 cups cooked rice – any type you like

4 eggs

1 cup whip cream

¾ cup grated parmesan cheese – plus extra to sprinkle

¼ cup finely chopped parsley


  1. Heat oil in large deep skillet and sauté chorizo until golden brown

  2. Stir in rice

  3. Combine eggs, whip cream and cheese

  4. Pour into rice mixture and stir until egg has cooked

  5. Stir in chopped parsley

  6. Serve immediately and top grated parmesan
