Blue Cheese and Spinach Stuffed Chicken

I’ve been wanting to make something with blue cheese for a while and finely came up with this savory blue cheese with spinach stuffed chicken. Went amazingly well with a simple tomato cucumber and bocconcini salad. I paired this up with a Tinhorn Rose which made it a complete meal.
Ingredients
1 tbsp olive oil
½ cup chopped onion
1 bunch fresh spinach
1 tsp salt
2 cups corn flakes
3 chicken breasts
1 tsp Lawry’s garlic salt or salt and pepper to taste
1 cup blue cheese
1egg
¼ cup milk
Cooking spray
Directions
In large skillet heat olive oil and sauté onions until soft
Add spinach and salt and cook until wilted. Let cool for 15 minutes
Preheat oven to 390°F and spray baking pan
Crush cornflakes in plastic bag and place into plate
Butterfly chicken breasts, sprinkle with garlic salt or salt and pepper
Using 2 pieces of saran wrap pound chicken to ¼ inch thick
Using your hands crumble blue cheese into small pieces
Pat down 1/3 of blue cheese on each piece of chicken
Pat down 1/3 of spinach mixture on each piece of chicken
Roll up chicken tightly
Beat egg and milk and dip in chicken until well coated
Dip chicken in corn flakes until well coated
Lay chicken seal side down in baking pan
Bake for 50 minutes and let sit for five minutes before serving with veggies or salad
