Easy Creamy Potato and Ham Bake

Serves: 8

Any brunch needs to have some kind of potato. This recipe is full of flavour with ham, green onions and spices but adding cheese, cream and mayonnaise makes this very creamy. A great rival to the regular scalloped potatoes.


1200 grams russet potatoes

2 cups diced ham

½ cup diced green onions

¾ cup milk

¾ cup heavy cream

½ cup mayonnaise

½ tsp dried rosemary

½ tsp dried thyme

½ tsp garlic salt

1 tsp paprika

1 ½ cup shredded cheddar cheese

1 cup shredded mozzarella

Cooking spray


  1. Preheat oven to 375°F

  2. Peel and cut potatoes to 2 inch cubes and place in large bowl

  3. Add all ingredients except for mozzarella

  4. Mix potato mixture well

  5. Spray large casserole dish with cooking spray and pour in potato mixture

  6. Cover either with casserole dish cover or aluminum foil and bake for 1 hour or until potatoes are tender

  7. Remove cover/foil and sprinkle mozzarella cheese

  8. Bake for 25 minutes or until cheese is golden

  9. Let rest for 10 minutes
