Serves: 2 – 3

Tender pork cutlets are stuffed with savoury pork sausage and creamy mozzarella, then baked to golden perfection alongside potatoes, carrots, and sweet red peppers. Hearty, flavourful, and wonderfully comforting, this delicious one-pan meal is sure to satisfy the whole family.

Ingredients

350 gr peeled and diced potatoes

110 gr peeled and diced carrots

100 gr diced red peppers

Garlic salt or salt & pepper to taste

Dried oregano to taste

Olive oil to coat vegetables

250 gr pork cutlets

250 gr pork sausages (I used balls, but you can buy the links and cut to size)

Shredded mozzarella as required

Lemon Pepper Seasoning (My recipe), to taste

Olive oil to coat pork rolls

2 tomatoes

Salt

Dried oregano

Olive oil

Balsamic vinegar

Directions

  1. Preheat oven 390°F

  2. In a large bowl add potatoes, carrots, peppers, garlic salt and oregano and mix well with your hand

  3. Pour the vegetables in a baking pan and spread them out evenly.  Bake for 10 minutes

  4. In the meantime, let’s make the pork rolls by seasoning the pork cutlet with garlic salt, then adding as much mozzarella on top.  Place sausage meat on top of the mozzarella and roll up the cutlet using toothpicks to seal the edges

  5. Place the rolls in the bowl you used for the veggies and add lemon pepper seasoning and oil.  Use your hands to fully coat the pork rolls with seasoning and oil

  6. Remove the pan from the oven and move the veggies to the outer portion of the pan and place the rolls in the middle with the seam side up

  7. Bake for 20 minutes

  8. Remove the pan from the oven and sprinkle as much mozzarella you want on top of everything in the pan

  9. Bake for 5 minutes or until mozzarella is golden

  10. Remove from oven and let sit for 5 minutes

  11. Serve pork and veggies on a plate and add some sliced tomatoes seasoned with a sprinkle of salt, dried oregano, olive oil and balsamic vinegar

Ingredienti

350 gr patate sbucciate e a dadini

110 gr di carote sbucciate e a dadini

100 gr di peperoni rossi a dadini

Sale al’aglio o sale e pepe a piacere

Origano secco a gusto
