Chicken Veggie Boat

Serves: 2

Make cuts in the chicken breast just right and it becomes a bowl. Add some cheese and veggies, bake it and pair it up with my Roasted Peppers and Cauliflower and Green Bean Salad recipes, well now you have a delicious meal.


2 tbsp olive oil

1 long sweet pepper finely chopped

2 shallots finely chopped

4 cups baby spinach

¼ cup vegetable broth

Garlic salt or salt and pepper to taste

2 large chicken breasts

Fresh mozzarella cheese


  1. Heat oil in skillet and sauté pepper and shallots for five minutes on medium-high heat

  2. Stir in spinach and add vegetable broth and garlic salt and mix well

  3. Cook until liquid is absorbed and spinach has wilted

  4. Set aside to cool for 15 minutes

  5. Preheat oven 390°F and brush some butter or margarine in a coverable baking dish

  6. Pat dry chicken and take off any fatty bits

  7. Make a cut down the middle of chicken and then filet on each side to make a shape of boat bowl

  8. Season chicken with garlic salt or salt and pepper to taste

  9. Press two slices of mozzarella into each boat bowl

  10. Fill each chicken bowl with half of the spinach mixture

  11. Place both in baking dish and cover and bake for 40 minutes

  12. Uncover and place two slices of fresh mozzarella on each piece of chicken

  13. Bake for 10 more minutes

  14. Remove from oven and let sit for five minutes
