Egg, Ham & Cheese Cups

Makes 12 Cups

Easiest way to get kids to eat eggs, cheese and ham is with these simple egg cups. You can find all kinds of recipes on-line for them but this one I have been making for brunches since the 80’s and is always a favourite.

Ingredients

12 slices of round honey ham sliced thinly

2 slices of Kraft slices

12 eggs

Salt and pepper to taste

Cooking spray

​Directions

  1. Pre-heat oven to 390˚F

  2. Spray 12 cup muffin tin with cooking spray

  3. Place ham into each muffin cup and press slowly until you get the ham formed into the cup

  4. Cut each Kraft slice into six pieces and place one piece on top of each ham cup

  5. Crack one egg into each ham cup

  6. Salt and pepper each cup to taste

  7. Bake for 15 minutes

  8. Take out and let cool for 5 minutes

  9. Use a tablespoon to scoop up each egg cup

  10. Serve with hash browns or fruit
