Serves: 5 - 6

While we were in the Torino area for a wedding, Anna from our Fortemaggiore AirB&B gave me several squashes to take home. I have never been enticed to create squash recipes because I didn't like them and to be honest was scared to use them. But with a little research I've created three recipes and this recipe uses the Marina di Chioggia squash. Honestly, it is absolutely delicious! Thank you, Anna, for pushing me outside of my comfort zone.

Marina di Chioggia squash is a traditional Italian winter squash from the Veneto region, known for its large, flattened shape, dark green, bumpy skin and sweet, deep orange flesh. It has a rich, earthy flavour and a dense, creamy texture, making it perfect for soups, risottos, gnocchi, ravioli and roasting. A beloved ingredient in Italian autumn cooking, this distinctive squash brings authentic flavour and a touch of tradition to seasonal dishes.

My Marina di Chioggia Squash Gnocchi are a delicious taste of autumn, made with the naturally sweet, creamy flesh of this traditional Italian squash. Flavoured with aromatic spices and fresh fennel leaves, these tender gnocchi are tossed in rich, nutty brown butter and finished with crunchy walnuts for the perfect balance of sweetness, warmth and texture. A comforting Italian-inspired dish that transforms simple seasonal ingredients into something truly special.

NOTE: I started with 650 gr of flour on the working surface but noticed because the squash was roasted it wasn’t wet therefore, I removed 200 gr as I started to work the dough and used a total of 450 gram in this recipe.  You will have to see how your dough feels to ensure you don’t use too much or too little flour.

NOTE: I cooked two thirds of the gnocchi and froze the other third for another day as there was only three of us tonight for dinner.  The two thirds was enough for three people.

Ingredients

1100 gr of pulp from a 4 kg raw squash (I used Marina di Chioggia squash)

Garlic salt or salt & pepper to taste

1 tsp dried rosemary

1 tsp dried thyme

Olive oil as required

Semolina flour as required

30 gr chopped walnuts

450 gr flour

50 gr grated mixed cheese

120 gr butter

40 gr finely chopped shallot

10 gr fresh fennel leaves finely chopped

1 tsp dried tarragon

Grated cheese to taste

Directions

  1. Preheat oven at 425°F and line a large baking sheet with parchment paper

  2. Heat a skillet and toast the walnuts until they start to brown and can smell the sweet aroma

  3. Transfer them to a bowl and set aside

  4. Wash the squash well and using a large chef’s knife cut the squash it into large slices, leaving the skin on – I followed the lines on the squash which made it easier to get almost the same size slices

  5. Remove the seeds and slice each piece in half to get a thinner slice

  6. Place the pieces into a large bowl and add garlic salt, rosemary, thyme and as much oil required to coat all the pieces of squash.  Use your hands to ensure everything is coated well

  7. Place all the pieces on the baking sheet and cook for 35 minutes or until soft

  8. In the meantime, line three baking sheets with parchment paper and lightly sprinkle them with semolina flour and set them aside

  9. Once you can easily fork the squash, remove it from the oven and let it cool.  Note, some pieces may take longer so place the cooked squash in a large bowl while you continue to cook the rest

  10. When you can easily hold the squash in your hands without burning yourself, use a paring knife to remove the peel and the hard parts of the flesh from being baked and place in large bowl

  11. The squash should be free of crunchy baked bits

  12. Using your hands mash the pulp as best as you can

  13. Now place the mashed pulp into a potato masher to thinly mash the squash – sorry no photo of this step but you can see what it looks like mashed

  14. Place flour and parmigiano onto your working surface and mix together with your hands

  15. Add the mashed squash and knead until well combined

  16. Bring the dough together into a large log and use your thumb to press into the dough so you can see it dimples

  17. Using a dough scraper cut a piece of dough and roll it out on the floured surface to ½-inch-thick rope

  18. Cut rope crosswise into ¾-inch pieces

  19. You can leave the gnocchi as and cook them or use a gnocchi board to roll gnocchi to give it the typical gnocchi shape like we have done here

  20. Transfer the gnocchi onto the baking sheets and refrigerate for at least 1 hour

  21. Bring a large pot of salted water to boil

  22. In the meantime, melt and cook butter in a large skillet over medium heat for 3 minutes

  23. Stir in the shallot and continue to cook until the butter gets golden

  24. Lower the heat to low and add the fennel leaves and tarragon to the pan and mix well.  Now lower the heat to the lowest possible heat

  25. When the water boils slowly add a third of the gnocchi and when they all float to the top, they are ready

  26. Use a slotted spoon to transfer the gnocchi to the skillet and just let them sit there until you cook all of the gnocchi

  27. Once all the gnocchi have been cooked slowly mix the gnocchi into the butter sauce and stir in as much grated cheese you want

  28. Add the walnuts and carefully mix everything together

  29. Serve immediately in a wide bowl

Gnocchi di Zucca

Porzioni: 5 - 6

Sale all’aglio o sale e pepe a piacere

1 cucchiaino di rosmarino essiccato

1 cucchiaino di timo secco

Olio d'oliva secondo necessità

Farina di semolino secondo necessità

30 gr di noci tritate

450 gr di farina Manitoba

50 gr di formaggio misto grattugiato

120 gr di burro

40 gr di scalogno finemente tritato

10 gr di foglie fresche di finocchio tritate finemente

1 cucchiaino di dragoncello essiccato

Indicazioni

  29. Servi subito in una ciotola larga
