Kabocha Risotto
Scorri a basso per l’Italiano
Serves 3 – 4
While we were in the Torino area for a wedding, Anna from our Fortemaggiore AirB&B gave me several squashes to take home. I have never been enticed to create squash recipes because I didn't like them and to be honest was scared to use them. But with a little research I've created three recipes and this recipe uses the Kabocha squash. Honestly, it is absolutely delicious! Thank you, Anna, for pushing me outside of my comfort zone.
Kabocha squash, also known as Japanese pumpkin, is a winter squash with deep green skin and vibrant orange-yellow flesh. It has a naturally sweet, nutty flavour, often compared to a mix of pumpkin and sweet potato, with a smooth, creamy texture when cooked. Rich in vitamins A and C, fibre and antioxidants, kabocha is delicious roasted, baked, steamed or added to soups, making it a perfect ingredient for comforting autumn and winter dishes.
My Kabocha Risotto is a comforting Italian dish made with tender baked squash, creamy Carnaroli rice, melted cheese and savoury bacon. Every spoonful brings together the natural sweetness of the squash, the richness of the cheese and the delicious smoky flavour of bacon, creating a warm, satisfying dish perfect for autumn.
Ingredients
500 gr kabocha squash
Olive oil as required
Garlic salt or salt & pepper to taste
1 tsp dried rosemary
1 tsp dried thyme
1 tbsp vegetable broth
150 gr bacon cut into pieces
1 tbsp olive oil
1 tbsp vegetable broth
60 gr chopped onion
250 gr carnaroli rice
200 ml white wine
1 litre vegetable broth – or more if required
2 tbsp butter
60 gr grated pecorino Romano cheese (or any kind you like)
Directions
Preheat oven 400°F (200°C) and line a baking sheet with parchment paper
Clean and cut the squash into wedges and remove seeds
Plance in a large bowl and add oil, garlic salt, rosemary and thyme and using your hands mix so that the squash is fully coated
Roast for 25–30 minutes until soft and caramelized
Remove and let cool on baking sheet until you can handle the pieces with your hands
Using your hands remove the pulp from the skin and mash with a fork leaving some little chunks
Set the squash mash aside
In a large saucepan heat broth and sauté bacon until crispy
Using a slotted spoon, transfer bacon to a bowl leaving as much of the bacon grease in the pan. Then using a paper towel remove as much of the grease as possible then set aside
Add broth to the saucepan and sauté onions until translucent
Stir in the rice and toast for a couple of minutes until it starts to brown
Pour in the wine and cook until it has been absorbed
Add one liter of broth and turn heat to high until it boils hard then reduce to medium high, stirring occasionally until liquid has been absorbed – add more broth if required to cook the rice. I didn’t have too for mine
Once the rice is cooked stir in the mashed kabocha and mix well
Add butter and cheese and stir until butter and cheese have melted into the rice
Taste rice for seasoning, adding more if required
Stir in the bacon and serve immediately

Kabocha Risotto
Porzioni: 3 – 4
Ingredienti
500 gr zucca kabocha
Olio d'oliva secondo necessità
Sale all’aglio o sale e pepe a piacere
1 cucchiaino di rosmarino essiccato
1 cucchiaino di timo secco
1 cucchiaio di brodo di verdure
150 gr di bacon tagliato a pezzi
1 cucchiaio di olio d'oliva
1 cucchiaio di brodo di verdure
60 gr di cipolla tritato
250 gr riso carnaroli
