Bistro Bleu Salad

Serves: 1 for dinner with a sandwich

 

Crisp endive leaves topped with toasted walnuts and creamy Roquefort cheese, finished with a bright lemon dressing that balances the cheese's rich, tangy character. A refreshing French-inspired salad with layers of crunch, citrus, and bold flavor.  I served this with my Jambon-Beurre Sandwich.

 

TIP: You can caramelize the walnuts ahead of time, so they are ready for when you are ready to make the salad.

 

Ingredients

20 gr butter

40 gr chopped walnuts

35 gr sugar or brown sugar (richer flavour)

Zest and juice of ½ a lemon

¼ tsp good salt

4 tbsp sunflower oil

Endive lettuce to taste

Crumbled Roquefort cheese to taste

 

Directions

  1. Line a baking sheet with parchment paper

  2. Heat a non-stick skillet over medium heat and melt the butter

  3. Add walnuts and sugar and stir to combine everything

  4. Cook for 5 minutes, stirring continuously

  5. Watch for the sugar to melt and begin to coat the walnuts, keep stirring to prevent burning

  6. Once the sugar has melted and the walnuts are well-coated, transfer them to the baking sheet and quickly separate the nuts before they harden into clumps

  7. Allow them to cool for ½ an hour before using them

  8. In a bowl combine lemon zest, juice, salt and oil and whisk together. Set aside

  9. Cut the ends off of the endive and separate the leaves and wash and pat dry with a tea towel

  10. Place the whole leaves on a round plate and sprinkle as much crumbled cheese you want

  11. Top with as much caramelized walnuts you want

  12. Pour some dressing on each of the leaves

  13. Enjoy as a side to any meal – Today I serve with my Jambon-Beurre Sandwich

Porzione: 1 per cena con un panino

 

Foglie croccanti di indivia guarnite con noci tostate e formaggio cremoso Roquefort, completate con un condimento al limone brillante che bilancia il carattere ricco e acidulo del formaggio. Un'insalata rinfrescante ispirata alla francese con strati di croccantezza, agrumi e sapore intenso.  Ho servito questo con il mio Jambon-Beurre Sandwich.

 

CONSIGLIO: Puoi caramellare le noci in anticipo, così saranno pronte per quando sarai pronto per preparare l'insalata.

 

Ingredienti

20 gr di burro

40 gr noci tritate

35 gri di zucchero o zucchero di canna (sapore più ricco)

Scorza e succo di mezzo limone

1/4 cucchiaino di sale buono

4 cucchiai di olio di girasole

Indivia a gusto

Formaggio Roquefort sbriciolato a gusto

 

Indicazioni

  1. Fodi una teglia con carta da forno

  2. Scalda una padella antiaderente a fuoco medio e sciogli il burro

  3. Aggiungi noci e zucchero e mescola per unire tutto

  4. Cuoci per 5 minuti, mescolare continuamente

  5. Fai attenzione che lo zucchero si scioglia e inizi a ricoprire le noci, continua a mescolare per evitare bruciatura

  6. Una volta che lo zucchero si è sciolto e le noci sono ben ricoperte, trasferile sulla teglia e separi rapidamente le noci prima che si induriscano in grumi

  7. Lasciali raffreddare per mezza ora prima di usarli

  8. In una ciotola mescola scorza di limone, succo, sale e olio e fruscia insieme. Metti da parte

  9. Taglia le estremità dell'indivia e separa le foglie, lava e asciuga con un canovaccio

  10. Metti le foglie intere su un piatto rotondo e spargi quanto formaggio sbriciolato vuoi

  11. Guarnisci con tutte le noci caramellate che vuoi

  12. Versa un po' di condimento su ciascuna delle foglie

  13. Godetevelo come contorno a qualsiasi pasto – Oggi lo servo con il mio Jambon-Beurre Sandwich
