Eggy Fried Rice

Serves: 8


This simple rice can be served as a side dish to any saucy meat dish. I paired it with my Crockpot Pork Tenders which had lots of sauce, Baby Potato Salad and Roasted Parm Asparagus. Absolutely great meal combination.


Ingredients

2 cups dried basmati rice – cooked per package

2 tbsp olive oil

¼ cup finely diced shallots

3 eggs

Garlic salt or salt and pepper to taste


Directions

  1. Heat olive oil in a wok style pan and sauté shallots until translucent

  2. Beat eggs and garlic salt together

  3. Add rice to shallots and mix well

  4. Make a well in the middle of the pan and pour in eggs

  5. Let eggs set a bit and the with a wooden spoon combine the eggs into the rice

  6. Keep stirring until eggs are fully cooked

  7. Taste rice for salt and add more if required

Plate in a nice large bowl and serve as a side to any meal
