Savory Bread Casserole – Casseruola Pane Salato

Chunky pieces of rustic bread are soaked in vegetable broth then mixed with sautéed onions, carrots, celery and ham. Topped with cheese and a spiced up creamy egg, sour cream and yogurt sauce. A perfect way to reduce waste while creating a hearty, homey dish.

You can make three sizes, depending on how you slice them. For large rolls, slice into 8 pieces, for medium rolls slice into 16 pieces (this is what I used in this recipe) and if you want little finger ones, slice into 32 pieces.

Greek Piadina - Piadina Greca
Piadina Romagnolo are traditional thin Italian flatbread from the Emilia-Romagna region. The are typically called Piadina or Piada. It was Italian poet Giovanni Pascoli who Italianized the Romagnolo word “piè” to “piada” and he was so in love with the flatbread of his homeland that he wrote a poem “La Paida”, a tribute describing how the Piada/Piadina are prepared.
Today I made a Greek infused version which is delicious.
