Appetizer Baskets – Cestini Antipasti

Makes: 9 Appetizer Baskets

 

I adore Parmigiano Reggiano, and these little baskets bring so much flavour to my appetizer spread. The golden, crunchy cheese wafers are incredibly simple to make, and you can fill them with anything you like. Baby tomatoes, bocconcini, olives, rolled deli meats, a few cheese sticks, and some crackers on the side turn them into a delicious and eye‑catching appetizer. They’re a perfect addition to the menu when you’re hosting an aperitif with family or friends.

 

I made the cheese baskets the night before and then filled them just before the aperitif party started.  They can sit on the counter for up to two days.


I had my grandsons Weston and Jameson help me make these today. I love it when my "littles" help me in the kitchen to create new recipes.

 

Ingredients

120 gr finely grated parmigiano cheese

120 gr shredded parmigiano cheese

1 tbsp onion or scallion flakes

Salami slices

Ham slices

Chicken slices

Baby tomatoes

Baby bocconcini

Green olives

Fresh asiago cheese

Ritz crackers

 

Directions

  1. Mix together the two parmigiano cheeses and scallion flakes

  2. Heat a non-stick pan on medium heat and add 25 grams of cheese for each basket in the pan

  3. Press the cheese with the bottom of a spoon to form a round disc

  4. Let the cheese melt with the heat and when the edges start to get dark brown, press down on them and turn them over with a spatula

  5. Once both sides of the cheese are a golden brown, remove them from the pan and place them on an upside small bowl

  6. Place a piece of parchment paper on top of the cheese and press down on the sides.  This will form the shape of the basket

  7. Let it cool for a minute then carefully remove from the bowl and place on a plate

  8. Place in a sealable bowl if you are not making the appetizer baskets right away

  9. Let’s make the appetizers, roll up salami, ham and chicken meat to make a rose shape

  10. On 10 skewers add tomatoes, bocconcini and olives

  11. Slice the asiago into 20 small sticks

  12. Arrange the deli meats, skewers and asiago sticks on the parmigiano baskets

  13. Serve on a platter or large cutting board

Cestini Antipasti

Adoro il Parmigiano Reggiano, e questi piccoli cesti portano così tanto sapore al mio antipasto. Le wafer di formaggio dorate e croccanti sono incredibilmente semplici da preparare, e puoi riempirle con qualsiasi cosa tu voglia. Pomodotini, bocconcini, olive, salumi arrotolati, qualche bastoncino di formaggio e qualche cracker a lato li trasformano in un antipasto delizioso e accattivante. Sono un'aggiunta perfetta al menù quando ospiti un aperitivo con famiglia o amici.

 

Ho preparato i cesti del formaggio la sera prima e poi li ho riempiti poco prima che iniziasse la festa dell'aperitivo.  Possono stare sul bancone fino a due giorni.

 

Ingredienti

120 gr di formaggio parmigiano finemente grattugiato

120 gr parmigiano meno finemente grattugiato

1 cucchiaio di fiocchi di cipolla o cipollone

Fette di salame

Fette di prosciutto cotto

Fette di pollo

Pomodorini

Bocconcini

Olive verdi

Formaggio asiago fresco

Craker di Ritz

 

Indicazioni

  1. Mescola insieme i due formaggi parmigiano e le fiocchi di cipollone

  2. Scalda una padella antiaderente a fuoco medio e aggiungi 25 grammi di formaggio per ogni cesto nella padella

  3. Premi il formaggio con il fondo di un cucchiaio per formare un disco rotondo

  4. Lascia che il formaggio si scioglia con il calore e quando i bordi iniziano a diventare marrone scuro, premi su di essi e girali con una spatola

  5. Quando entrambi i lati del formaggio sono dorati, toglili dalla padella e metti su una piccola ciotola rovesciata

  6. Metti un foglio di carta da forno sopra il formaggio e premi sui lati.  Questo formerà la forma del cestino

  7. Lascia raffreddare per un minuto, poi toglielo con cura dalla ciotola e metti su un piatto

  8. Metti in una ciotola sigillabile se non prepari subito i cestini antipasti

  9. Facciamo gli antipasti, arrotoliamo salame, prosciutto e carne di pollo per formare una rosa

  10. Su 10 spiedini aggiungi pomodori, bocconcini e olive

  11. Taglia l'asiago in 20 piccoli bastoncini

  12. Dispara i salumati, gli spiedini, i bastoncini di asiago e I craker sui cesti di parmigiano

  13. Servi su un vassoio o su un tagliere grande
