Savory Bread Casserole – Casseruola Pane Salato

A rustic, comforting bake that transforms day-old bread into something rich and satisfying. Chunky pieces of rustic bread are soaked in vegetable broth then mixed with sautéed onions, carrots, celery and ham. Topped with cheese and a spiced up creamy egg, sour cream and yogurt sauce.  A perfect way to reduce waste while creating a hearty, homey dish.

 

Ingredients

240 gr leftover bread – a day or two old

500 ml vegetable broth 

1 tbsp butter

100 gr frozen finely chopped onions, celery & carrots

125 gr chopped ham

120 gr crumbled feta cheese

120 gr cubed fresh asiago cheese

Finely chopped parsley to taste

Hot pepper flakes to taste

Cooking spray

1 egg

180 gr sour cream

80 gr Greek yogurt

20 ml milk

½ tsp dried rosemary

½ tsp dried thyme

1 tsp dried onion flakes

 

Directions

  1. Preheat oven 350°F

  2. Cut leftover bread into bite-size pieces and place it in a bowl.  Heat the broth to a boil and pour over the bread. Set aside until liquid is absorbed

  3. In the meantime, melt the butter, add onion, celery carrots and sauté for 3 minutes

  4. Add ham and sauté for 5 minutes, stirring frequently until the ham starts to brown

  5. Pour the ham mixture into the moist bread and mix together

  6. Gently fold in the feta, asiago, parsley and hot pepper flakes

  7. Spray a baking dish with cooking spray and add the bread mixture, spreading evenly in the dish

  8. In the bowl, beat together egg, sour cream, yogurt, rosemary, thyme and dried onion

  9. Pour mixture over the bread mixture making sure the creamy sauce is all over

  10. Bake for 30 minutes until the top is golden brown

  11. Remove and let sit for 5 minutes to have the bread solidify a little bit.  Note this is a soft and moist casserole

  12. Serve with a salad of your choice.  I served with a green salad with radish and green onions

Casseruola Pane Salato

Una cottura rustica e confortante che trasforma il pane di un giorno prima in qualcosa di ricco e soddisfacente. Pezzetti grossi di pane rustico vengono immersi in brodo di verdure e poi soffritto con cipolle, carote, sedano e prosciutto. Guarnito con formaggio e una salsa cremosa e speziata di uovo, panna acida e yogurt.  Un modo perfetto per ridurre gli sprechi creando un piatto sostanzioso e casalingo.

 

Ingredienti

240 gr di pane avanzato – un giorno o due

500 ml di brodo di verdure

1 cucchiaio di burro

100 gr di cipolle, sedano e carote congelati finemente tritati

125 gr di prosciutto tritato

120 gr di formaggio feta sbriciolato

120 gr di formaggio asiago fresco a cubetti

Prezzemolo finemente tritato a piacere

Fiocchi di peperoncino piccante a piacere

Spray da cucina

1 uovo

180 gr di panna acida

80 gr di yogurt greco

20 ml di latte

1/2 cucchiaino di rosmarino essiccato

1/2 cucchiaino di timo essiccato

1 cucchiaino di fiocchi di cipolla essiccata

 

Indicazioni

  1. Preriscaldare il forno a 175 °C

  2. Taglia il pane avanzato in pezzi piccoli e mettilo in una ciotola.  Scalda il brodo fino a ebollizione e versa sul pane. Mettere da parte finché il liquido non viene assorbito

  3. Nel frattempo, sciogli il burro, aggiungi cipolla, sedano e carote e soffriggi in padella per 3 minuti

  4. Aggiungi il prosciutto e soffriggi per 5 minuti, mescolando spesso finché il prosciutto non inizia a dorarsi

  5. Versa la miscela di prosciutto nel pane umido e mescola insieme

  6. Incorpora delicatamente la feta, l'asiago, il prezzemolo e i fiocchi di peperoncino piccante

  7. Spruzza una teglia da forno con spray da cucina e aggiungi la miscela di pane, spargendo uniformemente nella teglia

  8. Nella ciotola, batti insieme uova, panna acida, yogurt, rosmarino, timo e cipolla essiccata

  9. Versa il composto sopra il composto di pane assicurandoti che la salsa cremosa sia ovunque

  10. Cuoci per 30 minuti finché la superficie non è dorata

  11. Rimuovi e lascia riposare per 5 minuti per far solidificare un po' il pane.  Nota che questa è una casseruola morbida e umida

  12. Servi con un'insalata a tua scelta.  L'ho servito con un'insalata verde con ravanelli e cipollotti
