Serves: 2

I wanted a light meal for dinner tonight therefore made a panino (sandwich) and paired it with this light and flavorful salad.  There was extra dressing therefore I used it for a green salad the next day.

NOTE: for the veggies to absorb the flavour, it is recommended to make this two hours before you want to serve it.

Ingredients

265 gr canned corn drained and dried with paper towel

120 gr fresh asparagus tips cut into pieces

Olive oil as required

Zest of 1 lemon

60 ml freshly squeezed lemon juice

120 ml olive oil

2 tbsp honey

1 tsp Dijon mustard

½ tsp garlic granules

½ tsp onion flakes

Sea salt to taste

150 gr bocconcini balls

Thinly sliced green onions to taste

Directions

  1. Preheat oven 400°F and line a baking sheet with parchment paper

  2. In a bowl, use your hands to mix together corn, asparagus and as much oil required to coat everything

  3. Lay the veggies on baking sheet spreading everything out and roast for 10 minutes

  4. Remove from the oven and stir everything then roast for until corn and asparagus are golden and slightly crispy. Remove from the oven and let cool in the baking sheet

  5. Make the dressing by adding lemon juice, oil, honey, mustard, garlic, onions flakes and salt to a measuring cup and using an immersion blender, blend until emulsified

  6. In a sealable bowl, add the veggies and dressing and mix well

  7. Cover and refrigerate to let the vegetables absorb the dressing flavours for at least 2 hours

  8. ½ hour before serving remove from the fridge

  9. When ready to serve cut the bocconcini in half and add to the bowl

  10. Add the green onions and mix well

  11. Serve as a side to any meal, I added it to our panini today

Insalata di Mais e Asparagi Arrostiti

Porzioni: 2

Sale marino a gusto

150 gr di palline di bocconcini

Cipollotti a fette sottili a gusto

Indicazioni

  10. Aggiungi i cipollotti e mescola bene

  11. Servi come contorno a qualsiasi pasto, oggi l'ho aggiunto al nostro panini
