Trofie is a thin twisted funny looking pasta from the Liguria region of Italy. It is believed it originated in the town of Sori in the province of Genoa. Trofie means “gnocchi” in the Ligurian dialect, and even though this pasta is made from flour and potatoes, it has a different in shape and texture over the gnocchi. Today I combined this pasta with a creamy sauce with bacon and asparagus. Truly a delicious meal.
