A creamy risotto packed with tender chicken, savory ham, fresh asparagus, and molten chunks of scamorza cheese.  Finished in the oven until the top turns golden and crisp, it delivers that perfect mix of velvety comfort and irresistible crunch — a simple, hearty dish that feels absolutely worth making.

Served with a simple Dijon & honey green salad.

Ingredients

1200 ml vegetable broth

420 gr risotto rice

30 gr butter

25 gr flour

300 ml milk

1 tsp paprika

1 pack saffron

30 gr butter

120 gr cooked ham

130 gr cooked chicken

180 gr steamed asparagus cut into pieces

300 gr scamorza cut into cubes

Salt & pepper to taste

Cooking spray

Breadcrumbs as required

Grated parmigiano as required

Green lettuce, cleaned and cut into pieces

Dijon & Honey Salad Dressing (My Recipe)

Directions

  1. Bring the vegetable broth to a boil and stir in the rice. Let it cook until the liquid is absorbed, without stirring, for about 20 minutes

  2. In the meantime, in a medium saucepan, let's make the bechamel sauce by melting the butter and stirring in flour, mixing until it starts to brown a little

  3. Slowly pour in the milk and whisk together until smooth

  4. Stir in the paprika and saffron and mix well, set aside

  5. Preheat oven to 400°F

  6. When the rice is cooked, remove from heat and stir in the butter

  7. Transfer the rice to a large bowl and let it cool for ten minutes

  8. Stir in the béchamel sauce and mix well

  9. Add the ham, chicken, asparagus and scamorza cheese and mix until well combined.  Taste and if required add salt & pepper to taste

  10. Spray a baking dish with cooking spray and sprinkle with breadcrumbs

  11. Spread the risotto mixture evenly into the baking dish

  12. Sprinkle the top with parmigiano cheese and breadcrumbs

  13. Bake for 25 – 30 minutes or until there is a nice crispy crust on top

  14. Let sit five minutes before serving

  15. Serve with a side green salad
