One Dish Rice Bake

Serves: 3

When you are in a pinch, using minute rice means this dish is ready in 35 minutes. Loaded with cheese, ham, and broccoli or cauliflower means this doesn’t have to be served with anything else as it is a hearty meal. Omit the meat and this becomes vegetarian.


Cooking spray

2 eggs

2 cups Minute rice

2 cups milk

2 cups shredded cheddar cheese

1 cup chopped chicken or ham slices

2 cups broccoli or cauliflower flowerets

1 tsp dried rosemary

1 tsp dried thyme

½ tsp paprika

¼ cup shredded cheddar cheese

Finely chopped parsley


  1. Preheat oven 390°F and spray coverable casserole dish with cooking spray

  2. In a large bowl mix all ingredients except 1/4 cup cheddar and parsley together

  3. Pour rice mixture into casserole dish, cover and bake for 25 minutes

  4. Remove cover, sprinkle cheese on rice and bake uncovered for five minutes

  5. Let cool for five minutes before serving

Plate and sprinkle with parsley
