Fried Cauliflower & Carrots

Serves: 8

My mom would make egg fried cauliflower for Christmas dinner all the time. I’ve kicked it up a notch by adding parmesan and garlic salt.


4 cups par-boiled carrots

4 cups par-boiled cauliflower

3 eggs

¼ cup milk

¼ cup grated parmesan

2 cups flour

Garlic salt to taste

Oil for frying


  1. Mix together eggs, milk and cheese in medium bowl

  2. Place flour in medium bowl

  3. Dip carrots and cauliflower in egg mixture then lightly coat with flour and place on dish until you have dipped all your veggies

  4. Sprinkle with garlic salt

  5. Prepare large baking sheet with paper towel

  6. Heat about ¼ inch oil in a large skillet

  7. Fry each vegetable separately and keep turning until lightly browned on all sides

  8. Place on baking sheet so oil is absorbed by paper towel

  9. When all the veggies are fried, place paper towel on top and lightly press to absorb oil from top

  10. Serve with my zesty ranch dressing
