Roasted Potatoes and Asparagus

Serves: 4

These roasted veggies augment any meal and are very simple to make while you are making the rest of your meal.


6 cups baby golden potatoes cut into quarters

2 tbsp olive oil

Garlic salt or salt and pepper to taste

1 tbsp dried oregano

1 medium onion diced

4 cups asparagus spears cut into 1 ½ inch chunks

Garlic salt or salt and pepper to taste

½ tsp dried oregano

Juice of two lemons


  1. Preheat oven 390°F

  2. Line large baking sheet with aluminum foil

  3. In a large bowl combine potatoes, olive oil, garlic salt, 1 tbsp oregano, and onions

  4. Lay potatoes on baking sheet and bake for 15 minutes

  5. Stir the potatoes and bake for another 10 minutes

  6. Add asparagus to bowl and add garlic salt and ½ tsp oregano and mix well

  7. Place on baking sheet with potatoes and mix everything together

  8. Bake for 10 minutes and pour lemon juice on potatoes and asparagus and mix

  9. Bake for 5 minutes and serve
