Coleslaw is a great side to any meal but broccoli slaw kicks it up a notch by giving it extra crunch and flavour. It can be eaten within a couple of hours of making it but truly better the next day.
Ingredients
1 pack broccoli slay mix (green cabbage, red cabbage, broccoli and carrots)
¾ cup sliced celery
2 tbsp thinly chopped red onions
2 green onions thinly sliced
½ cup salted sunflower seeds
½ cup mayonnaise
2 tbsp white vinegar
½ tsp paprika
Salt to taste
Directions
Combine slaw mix, celery, both onions and sunflower seed in a coverable bowl
In a small bowl whisk together mayo, vinegar and paprika
Pour over coleslaw mixture and mix until everything is well combined
Taste for salt and add if you want a little saltier than the sunflower seeds provide
Cover and let sit in refrigerator for two hours before serving (overnight is better)
It will last three days in airtight container in fridge
Serve as a side to anything. I've served it with Maria's Monte Cristo Sandwich and Cauliflower Rice which pared very well with the slaw.
